Chocolate Chip Cookies

4 cups flour
4 tablespoons flour
1 teaspoon baking powder
1 teaspoon salt
24 tablespoons (340 grams) melted butter
2 cups brown sugar
1 cup sugar
2 eggs
2 egg yolks
4 teaspoons vanilla
3 cups chocolate chips
2 cups nuts

1.) Mix flour powder and salt in large ziploc bag
2.) blend butter and sugars...add egg, yolks, and vanilla
3.) add bag of dry ingredients until combined
4.) add chocolate chips and nuts
5.) place on pan and bake 12-18 min.

Cornbread

1 cup flour
1 cup cornmeal
1/4 cup sugar
1 tablespoon baking powder
1 cup cream
1/4 cup olive oil
1/4 cup honey
2 eggs

Mix...and bake at 350 until done!

Quiche

1/2 cup diced onion
4 cups diced mushrooms
1/4 cup diced red peppers
1 tablespoon olive oil
1 cup grated cheese
2 tablespoons flour
1-1/4 cups milk
4 eggs
spices and seasoning
Crust:
1-1/2 cups all-purpose flour
1-1/2 teaspoons sugar
1 teaspoon salt
1/2 cup olive oil
2 tablespoons milk

1.) For crust: Combine dry ingredients.  Mix milk and oil, then pour over dry mixture.  Mix..then press into bottom of pan.

1.) saute veggies in oil until tender.
2.) combine cheese and flour...add in milk, eggs and spices...then add veggies...pour into crust.
3.) bake 40-50 min at 350.

Chilli

1 tablespoon olive oil
1 chopped onion
1 chopped green pepper
2 cloves garlic
1/2 pound of ground turkey
2 tablespoons tomato paste
1 can diced tomatos
2 cans kidney beans
1 packet chili seasoning
1/2 cup water

1.) Heat oil and sautee onion, pepper and garlic until tender. About 5 min.
2.) Add turkey 3-5 min more or until no more pink.
3.) Stir in tomato paste and seasoning packet
4.) Add tomatos and juices, beans, water, salt and pepper and bring to a boil. Reduce heat and simmer for 15 min.

Southwest Chicken Salad

4 skinless chicken breast, cooked and shreded
1 can of kidney beans
1 can of corn
4 oz. feta cheese crumbles
1 pack of taco seasoning

Mix all ingredients and serve cold. Eat with nacho chips!

Customizable Cobbler

1 cup of flour
1 cup of milk
1 cup of sugar
1 stick of butter
fresh or frozen fruit


1.) Mix flour, milk and sugar.
2.) Melt butter in casserole dish. When it is bubbly add fruit and pour flour mixture over the fruit.
3.) Bake for 30 min.

Espana Enchiladas

4 boneless chicken breast 
1 jar of tomato sauce
1 can of kidney beans
1/2 cup of hot sauce
1 cup of sour cream
1 packet of enchilada seasoning
chopped mushrooms and peppers (optional)
10-12 tortillas
1 cup of salsa
Shredded Cheese


1.) Boil and shred chicken.  Mix tomato sauce, hot sauce, sour cream, seasoning packet and chicken and simmer on low heat for 30 min.
2.) Add beans and mushrooms/ peppers and simmer for 10 more min.
3.) Spoon mixture evenly into tortillas, wrap them and place in casserole dish.
4.) Cover with salsa and cheese.
5.) Bake for 20 min. until cheese is bubbly.
